Sherry Trifle 



                                            

Line the base of a bowl with sponge cakes that have been cut in half, spread with strawberry jam and put back together like a sandwich.

 Here we have used an antique cut glass fruit bowl that measures 23cm in diameter. In Britain we can buy these sponge cakes ready-made for use in trifles but any plain sponge would do. In the past, home-made cake that had become slightly dry would be used up in this way.

                    


In this case I have also placed some small sponge fingers around the sides of the bowl, but this is not obligatory. A selection of fresh or canned fruit is then added, sliced into bite-sized pieces. Here peaches, banana and strawberries have been used. Gradually pour liquid into the bowl until the cakes and  fruit become very moist, but are not sitting in a pool of liquid. The liquid used can be fruit juice, syrup from canned fruit, sweet sherry or a mixture of these. Sherry improves the flavour of the trifle considerably. 

Some people then like to add a layer of fruit jelly to the bowl, but I don't normally do so as it is not a traditional ingredient. Next a hot custard is made, allowed to cool slightly (so that the bowl does not crack) and poured carefully over the contents of the bowl. Custard is properly made with eggs, sugar and milk but in Britain for many years we have been able to buy tins of custard powder  which most people use to make a quick and easy custard. You just add hot milk to the powder and simmer it for a few minutes. I normally use this powder as it saves a lot of time and still tastes good. When the custard has set the trifle is finished off with a layer of whipped cream and decorated with fruit and flaked almonds. Here I have used glace cherries but fresh fruit would also be nice. Keep chilled until it is served.
